MY FAVORITE RECIPES By Mary Collins: Meet Colleen Hinman

Colleen Hinman is a Pullman native who has been involved with community service since she was in middle school. Her early contributions included being involved with the YMCA of the Palouse teen center. Today she is the CEO of the organization.

She began working professionally for the Y after earning a degree in Communications and Business Administration from Eastern Washington University in 2008. Before becoming CEO she was involved with their Healthy Living Program, the Special Olympics, Recruitment and Retention and Community Outreach.

The YMCA of the Palouse provides vital childcare resources through their after school, holiday break and summer youth programs. One of the goals of all of these programs is to promote healthy eating and physical activity.

In the spring of 2017, they implemented a program called “Mission Nutrition.” The program includes lessons about healthy eating and lifestyle choices with hands-on opportunities for the kids to try preparing snacks and meals.

Colleen is helped in this work by the Y’s Community Outreach Director, Jason Wilson, and Intern, Tricia Maxey. Both Jason and Tricia are graduates of Troy High School just east of Moscow. Jason graduated in 2009 while Tricia graduated in 2014.

Jason earned a bachelor’s in public relations from the University of Idaho. Tricia is slated to graduate from Lewis and Clark in Lewiston with a degree in business and communication in the spring of 2018.

The Mission Nutrition project resulted in a cookbook which will include healthy and easy-to-prepare recipes with a cost break down per serving. Here are some examples of Mission Nutrition recipes.

Tortilla Strips

Combine and layer ingredients in a bowl and top off with salsa, sour cream, and tortilla strips.

Rainbow Veggie Pinwheels

Tortillas

Whipped Cream Cheese

Dry Ranch Powder

Red Bell Pepper

Carrots

Yellow Bell Pepper

Spinach Leaves

Purple Cabbage

Slice ingredients into strips. Mix together 1 Tbsp. dry ranch powder with 2/3 cup of cream cheese, place ingredients into separate cups. Spread cream cheese spread on tortillas, layer veggies, roll up and enjoy!

Ranch Dressing Mix

Broccoli

Shredded Carrots

Cauliflower

Chop vegetables, mix ranch and cream cheese, spread on pizza crust and enjoy!
