Newly remodeled Grillbilly Cafe in LaCrosse gears up for April 17 opening

LaCrosse’s new restaurant, the Grillbilly Cafe, will open Wednesday, April 17.

Owner Dionne Evans said Tuesday that remodeling the 100-year-old building has been a challenge.

“We ran into more technical difficulties,” she said.

New lights are now installed in the cafe and plumbers were working in the cafe on Tuesday.

Evans said after talking to residents, she has adjusted the hours the cafe will be open.

Grillbilly will be open Wednesday, Thursday and Friday from 11 a.m. to 8 p.m., Saturday from 8 a.m. to 7 p.m. and the second and fourth Sundays from 11 a.m. to 2 p.m. It will be closed Monday and Tuesday.

The former Teapot Cafe has been under a major renovation for several months.

A large wood pellet barbecue will be in the back of the cafe that will be used to cook gourmet burgers, chicken and other barbecue specialties.

The cafe also will feature homemade pies made daily by Julie Roberts who gained notoriety for her pies at the Dusty Cafe.

“Our goal is to make it a destination,” Evans said.
