Colfax

Just an hour ago I rounded the corner at Eddy’s restaurant and noticed that the new windows were being installed and also that the new brick front was expertly put back into place.

Let me see, it has been a little more than twenty five years ago when Eddy opened for business.

Not only did he open for business but he also became an integral part of our little community.

I know for a fact that always when our children visit from Spokane, California or Texas, they always ask to go to Eddy’s for their favorites.

I recall too how they make me and my family feel at home.

They have always been most supportive in my efforts to teach in mainland China in one fashion or another.

I try my Chinese language skills on Eddy, Leon, Yutsi or Wally, they humor me and giggle a little but it is all in good humor.

I enjoy sharing my time and experiences and I get lots of smiles and head nodding.

We have here in Colfax a real treasure that many folks whether it be football traffic, Christmas shoppers or just plain folks have come to enjoy.

Here’s to Eddy’s - may you grow and prosper.
